My products actually weigh the same and I am charging flat shipping fee.
The real difference is that some products are prescription and others are over the counter so they are easier to process.
Is there a way to hardcode that such and such category has a shipping charge of $5 and another category has shipping charge of $8?
Would it be possible and easier to do it using handling fee?

As in could you add the products_weight as 5.00 and 8.00 respectively and use the Per Unit perweightunit shipping module to manage this for you?

You have an interesting suggestion but I am charging $5/8 for the first product in the category and then $1 for each additional one so I am not sure if your suggestion will work.
Nope you are wanting the opposite of how perweightunit works ...
And unfortunately the shipping_weight is a sum total passed to the shipping module(s) so you cannot utilize this method backwards ...
You could, however, write your own shipping module for this kind of calculation ...
Have you got your coder's hat on?
