We are just getting ready to roll-out our online store, but have been bricks and mortar for some time. We've received a number of email and snail mail reviews from customers that I would like to enter into the reviews section to kick things off. Any ideas on how I can do this? (Since I don't see any way for "guests" to enter reviews, it seems like I can't just type them in. PLEASE tell me I'm wrong... I can't be the first person to have this problem.)

I might suggest that you create a dummy customer account with a customer name of "By Email" or something like that.
Then enter all your reviews while logged in as that customer.
You can set them to auto-approve from Admin->Configuration->Product Info->Product Reviews require approval..
