Whenever one of my products sells out, the item is autmatically removed from the site and the quantity status is turned off in the admin. I would like to keep the quantity status box enabled at all times that way customers can see the merchandise even if it may be sold out. How do i do this?

Most all of these settigs are in admin > config > stock >
