Okay, I have PayPal IPN set up and it returns correctly, but the problem I'm having lies more on 'the general customization of PayPal' side of things.

I need help/input/ideas about the invoicing side of things.

On the PayPal invoice, the information that is standard, like the business name, the messege from seller, etc... How do you configure yours to support more than one site?
