I've been trying to figure out how to do the opposite, such as allow a coupon for all products except for one.

Create the Discount Coupon ...

On the Right panel you will see a button for RESTRICTIONS ...

Then set your restrictions on the Discount Coupon ...

NOTE: always test the Discount Coupon in various ways to ensure that it is working properly when restrictions are applied ...
