where are they kept

Hi all,

Can any tell me where the categories / products are kept on my server.

I have made a back up and need to reinstall it but my Host needs to know what file they are in

Any help is very appreciated

products and categories are stored in the database,
they are completely dynamic

Sorry if i sound a little thick, when i do a total back up , as i do just incase something go's wrong i cannot back up these files?
