Setting stock levels when using drop down boxes?

All of my products are available in different sizes, so I thought the easiest way to list them would be to list one example and then add a drop down box with the sizes available.

What I'm not sure about is how stock levels work when using this method.

How do I set the stock level for each size in the drop down box and when one size runs out of stock, will the option to purchase that size disappear from the drop down box?

I too have asked this question, and I have noticed various others have also. The reply I got was-

"If you have set the sizes using attributes, then you would need to resort to custom programming as the products quantity fields only operate at product level."

I would love to know if anyone out there can help with this custom programming as it seems lots of zenners would love to use it.
