I set up a coupon that allows you to get one of my products for free, but a friend of mine just ordered two with the code, and it gave him both of them for free. Is there a way to set that up so that only one of them is free if you buy multiples of the same product?

If this is for 1 free Product you could add that 1 Product with an amount limit of the value of the 1 Product ...
