Hi,
I want to get rid of
'Copyright (c) 2007 Zen Cart. Powered by Zen Cart'
from emails....how can I do this? (presuming its ok to get rid of it?)

You may change the displayed copyright information in the email output the same way you change any other text that shows by default:
