Anyone have any ideas for how I could have different titles/ description/alt tags for my alternate images?

If you're referring to the concept of 'captions', there is not currently an infrastructure in Zen Cart to set individual captions or any individually-specific details on additional images.
You could add it, but it will require custom coding and addition of database tables, etc. It all depends on how strong your PHP and MySQL skills are..

Any plans on the drawing board to add these capabilities in the future?
Guess I'll just put the caption on the images for now
