As it's set up right now, an order will come in, but I have to login to PayPal, then enter the customer's info and submit it before the purchase will show in my account - can't ZenCart do this automatically?
Yes, Zen Cart does it automatically if you have the PayPal module enabled, and customers choose it.
If you're using the offline credit-card module, then you'll have to do all the work manually. If you don't want to do the work yourself, turn off the CC module.

the CC module is already enabled, however, it is not processing through paypal. This is why I posted this to begin with - because it doesn't appear to be working. I need someone to check it for me.
Yes, I've read the "how to's" on how to do this, but alas, the order is still not processing through paypal without forcing me to login to paypal and manually run the order.
I repeat: The "CC" module is NEVER intended to process through PayPal.
ALL IT DOES is collect a CC number so you can MANUALLY process it through a swipe terminal.
That's why it's called "Credit Card - Offline Processing"
If you want PayPal to process your orders, turn on the appropriate PayPal modules and turn OFF your CC module.
