so what will happen if they don't upgrade? would my site be useless until they upgraded to php5?

You would be able to run your store today, and for as long as you wanted. You would not be able to upgrade to the next version of Zen however, unless tehy upgrade the PHP verison, and you would also find that some additional modules do not function correclty.
