What page do I go to in order to change the colour of the header on the side boxes and across the top of each page, i.e. the default Green parts.

What wording do I need to look for when doing this?

Those green bars are created by tiling an image, tile_back.gif locted in your template's images folder and controlled by your stylesheet.css.
