General Page and Table Layouts

I'm trying to make changes to the general table arrangement of my shopping cart, but I'm uncertain of what files to edit. Are the tables generated, or are they defined somewhere specifically?

Is it possible to separate the header into a different table from the rest of the site's content?

Apart from one layout table, the current release of Zen Cart doesn't generate tables other than for some product listings and specific pages like the shopping cart. The heading is not in a table.

Most of the time the layout is done using DIVs and CSS, and yes it is generated. You can see the files that do this in your includes/templates and includes/modules folder.
