How do I change the color of the actual template?

Okay - so this is frustrating me to death.

How do I change the color of the actual template - not the background?

I want it to be black (for a friend of mine), but the only thing I make black is the page background - not the actual shopping cart boxes.

Her template is BLACK. How do I do that?

You need to declare background-color for the rest of the elements you want black, or else eliminate their background-color properties completely and let them default to transparent.

If in doubt, search your stylesheet for "background-color" or even just "background" and change them one by one, checking the effect in each case to be sure of what you are doing.
