When editing my shipping and setting the zone to TAX, then shipping option gets removed from the selection when checking out

Ok great, new issue
Sales Tax is showing during checkout as 0%
1 - how do i edit the words - Sales Tax
2 - why is the amount 0 after i set this to 14%
At the point now where im ready to pay some one to help me sort this out

I'm sorry Lloyd I haven't been checking back here for awhile. I don't have any answers for you. I found the Zones arrangement confusing too, so have been reluctant to give any more ideas as I am no expert on this feature. Having said that, let me venture my "impression" on how zones works.
I don't believe you needed to add each area or jurisdiction if they don't have a separate tax. You say the tax is the same rate throughout SA. If that is the case, I believe you only needed to set the rate for SA and not create the other zones.
When I set my taxes up here in Colorado Springs, El Paso County, Colorado, USA I had several tax jurisdictions to deal with. In this area taxes are applied based on delivery address.
For instance: State of Colorado 2.9% - all sales to customers in Colorado taxed at 2.9% plus any other applicable local taxes.
Some of the local taxes:
County Tax: 1% Any sales delivered within my home county, El Paso County, must be taxed both the State 2.9% plus the County 1.0% tax (3.9% total)
RTA (Rapid Transit Agency) 1% - all sales delivered to certain portions of our county that fall within the RTA district. This was hardest to implement because it was hard to define what addresses were within this district. This amount is in addition to state and county taxes above. Total 4.9%.
Sales for delivery within my home city, Colorado Springs is an additional tax.
The rest of the world: no tax applied.
So if you look at your case, you only have one tax, which applies to sales within South Africa. Any thing else is the rest of the world and not taxable.
So as I see it, you only need to create the one zone: South Africa at 14%. No other jurisdiction is asking for separate taxes, so don't create zones for those jurisdictions.
Hope that helps. You want to get by with as few zones as possible. You are very lucky to have only one tax to deal with.

The quickest way to find specific words in your website files is to use the Developer's Toolbox in admin (admin-> Tools-> Developers Toolbox. I find it best to simply go to last search box at the bottom of the page titled "look up in all files", enter the search term (eg: 'Sales Tax') and select "All Files - Admin/Catalog" in the pulldown menu.
This will display all instances of your search term. This is especially helpful when your definitions may have changed from the defaults (eg: some stores need to label these taxes as VAT instead of Sales Tax or maybe want to change all instances of VAT to read Sales Tax or vice versa.)
When you search like this for "Sales Tax" look for lines that start with define. This is where you can change the wording to what you want. The filename will give you a clue where the term appears in your store pages.
