right now all the items i sell have to be shipping by them self. but when i use ups. it
adds just the weights together and gives me the shipping total. can i change that to ship per item and not just add the weight together

The Simple answer... NO.

At least not using the UPS shipping module, because it isn't designed to do more then send the weight to UPS to get a shipping price.

Your best bet would be to use one of the other modules (per item module, or shipping by weight module <-and setting each item at a weight that represents the price you wish to charge for that item to ship), and set them up in zones to get the prices you are after.
