Simplifying zencart-- no product types?

I have a client who is absolutely stymied by the internet. I can teach him a step-by-step process in order to fill his shop, but he's irritated by all the extra links that he will never use!
I know other people who would prefer less as well-- solo craftspersons,mostly.
And since I'm hosting, I'd love to have less diskspace used up by unnecessary files.
What files can I get rid of entirely? What links do I get rid of?

If you were to do that you will not be able to upgrade without having to do the same thing over and over again. This is not recommended.

You could however install the Admin levels mod and hide those parts and pieces your client won't need.
