How to modify the date a new product is added?

I need to add a product in such a way that it won't show up in the New Products listing. I understand that the easiest way to do this is to set the date in the DB to an earlier date, add the product, then re-set the date to current, so that Zen Cart will think the newly added product is actually old........ but HOW DO I DO THAT? How/where do I change the date?
Please, any help will be hugely appreciated!

You probably can't change the server's date.

Instead, add the product and then use phpMyAdmin to change the date_added field for that record in the products table.
