Gallery of Sold Items

I would like to set up a gallery of sold items as a category.

Is there a way to do this that will prevent the items from mixing in with available product? The referenced items are still on my site but appear to be available until their actual category pages are viewed, at which point they are flagged 'Sold Out'. I'd like to move these into a Gallery to avoid confusion but still allow viewers to see unique jewelry pieces I've sold.

If anyone could explain this to me in terms any idiot would understand, I'd be very grateful!
