Apple Zen template questions

Hello,

I have installed the Apple Zen template and have a few issues you may be able to help me with:

1) I have changed the template to grey but the hover over on the categories is still green.

2) How do I remove the bit at the top telling me how to change colour etc

3) The 'More Information' section has a few pages titled page_2 etc how do I change the page title of these?
