Email editing plz read -- how do I do these changes?

Hello, I would like to include my logo on the welcome email, but most importantly I would like the following:

1. for it to read Sincerly Customer Serivce (no store owner etc)
2. I would like it NOT to have my address, I would like only my address to show when someone chooses to send a check/money order.

To replace the old logo with yours.

1. create an logo called header_jpg
2. This is the default name
3. ftp to:
4. root directory/ email/ header.jpg

On the invoices, packaging slips<<(I would like instead of the address to read Thank You!), and email I would like it not to have my address, the only time I would like it not say is when they are checking out for a money order
