Missing Sub-categories Options somehow

I cannot FIND that I HAVE the option to put IN a subcategory - BUT I want/need to have them. It seems that they were there at one time....

Did it get turned 'off' somehow?
Where would I turn it 'on' or check to see if it is?

Your problem may be that you already have products in the category. You can't mix categories (or sub-categories) and products on the same level.

Yes. I do have products in a category....so are you saying that the whole category list has to be 'wiped clear' and start over to gain access to sub-categories?

Try creating a temporary dummy category and move all the products to it. Then create the sub-categories you need in the real category. When you're done (or as you create each sub-category), move the products from the dummy category to the real sub-category. When you're finished either delete or disable the dummy category. You can always rename and reuse the dummy category later, it you wish.
