Editing/Changing Manufacturer/Music/Genre

Hi all, I've been busy with irl job and my baby site that I've slowly managed to get up and running (been 18 months now, thanks for the help everyone!) What I am wanting to do, being dangerous and adventurous here(trying to expand my site), is to change the Manufacturer boxes, Music Genre and also Record company list, to something else that is more suited and appropriate to my site and the products I sell. For example, changing the Manufacturer option to say, "Set/Expansion" or something else altogether, or say from Manufacturer to Brand/Type. I am not sure if this is the correct place to post, as I have searched forums in the other topics but no one seems to have done this, and theres nothing in the tutorial either. I am also unsure about the Override system, I am still a n00b(proof be told via my site if you visit) My site is nearly 10k products and will keep on expanding. I would like something simple tht even I can understand. Every product entered into my site was done via zen-cart by hand, 1 by 1 and saving it on while logged into admin... I have tried back-up, easy Populate but... I never ever get it right, still trying to learn... Any help or suggestions, or some form of method would be greatly appreciated.
