All products showing as Sold Out

I've done a search both here and through the Tutorials/FAQs, and didn't find anything - forgive me if I missed some explanation for this elsewhere...

All of my products are showing as "Sold Out." I have each of them entered as "In Stock," and have even set the date available for each (to the day on which I enter them)... What could I be doing wrong here - what setting am I missing?

When entering products, did you enter how many of each item you have in stock?

Well, no (though I just did it now, and YES, that was the problem, and I feel silly about it), but I don't want to necessarily keep inventory through this shopping cart...

Is it possible not to have to specify?

Should I just put in a really, really large number?

Whatever you enter will decrease on sales
i.e.
Enter 100, sell 2, will reduce stock to 98

I put in 9,000 because when putting 100 000 000 it changed to "1e+08" and I'm not sure if it's going to work that way.

FYI, this is just the online store for merchandise related to a show - they don't do that much online sales, so the inventory counts are unimportant - I just want to be sure it's going to take a while before things start "running out."
