Depending on your host, you should be able to use your FTP program to set permissions. It'll be under 'Properties' or CHMOD if you right-click on the folder.
I set all those folders to 777 prior to installation, and leave them there.
I tend to do the same, and have not experienced security issues.
Directories are normally set to 755 and FILES inside them to 644.
If you do change the 777 to 755, then you may not be able to edit things like defined pages, etc, without changing their folder's permissions (/includes/ languages/english/html_includes) back to 777 first.
(levels of strictness with CHMOD are partly server configured, so much depends on these configs.)
OK, so I just leave them all set to 777.
I'm just little bit concern about the /images directory which has always been a target folder for hackers.
If you host has SUEXEC & PHPSUEXEC installed -OK, so I just leave them all set to 777

Then 755 for dir's and 644 for files is the most secure.
There is no requirement to have any above 755 under this system
If you intend on editing the defines files set them to 755 - edit - set them back to 644.
