So I have finally finished my zen-cart customization and I am ready to switch it into production and replace our old site.
What security steps should I take to get it ready for the
internet?
File permissions to watch out for? Etc?
I see some log that are world readable.. that might be bad.

In the /docs/ directory of your installation. Look for the Security Recommendations.
