How do I hide some admin menus?

I am building a shop using Zen Commerce.

I need to give other people admin access so that they can add/delete categories & items for sale. I would like to hide the menus that they don't need, so that they can't inadvertently change settings &c.

Obviously, I need to be able to reveal the hidden menus again when I need to make more extensive changes.
