How do we change the template to display the category page / product listing layout to be similar to:

There are a few mods that adjust the way product listing looks.
try a search for:
flexible-product-listing
column-layout-grid
These are two that I can name off the top of my head. Have a search in the add-ons section and see what you come up withNick
