Zones Table Rate Shipping Module clone

I'm handling shipping with a zone table rate, priced by item count, that looks like this...

Canada
1 item = $18
2-5 items = $27
6+ items = $38

US
1 item = $32
2-5 items = $63
6+ items = $75

My client now has an additional line of products to add that will require different shipping prices (as the items are heavier) and they want to use different item counts for the price levels, like this:

Canada
1 item = $27
2 items = $35
3+ items = $50

USA
1 item = $63
2 items = $75
3+ items = $100

So as you can see the item count will be different and the prices different, for the same geographic zones. But I still need to preserve the original zone table rates for use with some products.

I've seen some posts about cloning and wonder if that's the secret to this type of thing. If so, how do I then set the new category or new products individually to use the new shipping rate?
