Does anyone know what could be making this happen and how I can get the other pages back to http mode?

In your configure files, might you have put https addresses even for the non-SSL entries?

it looks like there's an 's' where one shouldn't be in the includes/configure file but for some reason when I edit it in smart.ftp, it just stays in the transfer que and won't load.
That will be because the configure files are write-protected. You will need to change their permissions on the server before you can apply your changes.

That depends on your FTP app and what your server allows. If you're able to edit server files in smart.ftp then a right click on them may reveal a facility for changing their permissions.
However, not all ftp apps have this, and not all servers allow it. So if it doesn't work you would need to use whatever file manager your host has made available in your control panel.

I've changed it and now the checkout doesn't display correctly
It brings up a box saying 'this website contains content that will not be delivered using a secure HTTPS connection, which could comprimise the security of the entire webpage' and then asks 'yes' or 'no'.

That suggests that you have removed the "s" from the SSL server definition (HTTPS_SERVER), or have the SSL switch (ENABLE_SSL) set to false.

No both are correct, this really has me up the wall
I've looked in the admin but can't see anything that could be causing the problem either.
The site in your sig is using URL re-writing. Might that be re-writing wrongly?
