Hi,
I want to make a simple change to the file /admin/includes/languages/english/invoice.php
Where should I save the modified invoice.php ?
As I understand I shouldn't save modified files in the admin folder?
Your help is appreciated.

There is no override support in the admin folder. Any edits you make must be saved to the same file.
