Order confirmation email shows ? instead of £ for currency

New site set up, done a test order and the email order confirmation is displaying '?' instead of '£'

for example ?20.00 instead of £20.00

how do I correct this and where?

ps managed to fix one other bigger problem reading through the forum so I have tried looking for the answers first.

... right at the bottom

Convert currencies for Text emails £,£:€,€

You must use the HTML Character Codes for these symbols which are shown in RED above.
