You don't.
You create the product with the correct product type *when* you create it.
Any attempts to "fudge" an existing product into another product type typically result in corrupted data because the extra type-specific data needs to be added too, and that's done by the create-product script.

Fair enough. So, when creating a new product via Catalog->Categories/Products, how do I specify the type? It doesn't seem to be an option on the creation page.
