Editing Menu buttons and centering them.

1. Im using the CSS Flyout Header 1.5. when you mouse over the button the sub categories are aligned to the left, is there a way to center them? ive been searching for awhile with no results.

2. when you mouse over ...say, information there are many sub categories, how can i remove the ones i dont want to use?
