Custom Customer Data To Order Data

I created an additional field in the customers table and the same field in the orders table.

During an order I want the customer field inserted into the order with the rest of the data. Where would this be done?

Is it in a function?

OK, after digging it looks like the a class within /includes/classes/order.php is creating the order.

Two questions????

Where is the customer table being read so I can add the new field?

Which function is actually saving to the orders table?
