Can you do this with Zen Cart?

I have a client that wants to build a robust product gallery the same as you would have in an e-commerce system (possibly the same) but does not want to use a payment gateway or complete the payment on the site. Once someone selects their product they can make an order and that order will be sent to the client (via email) and they will handle payment and shipping at their office.

Standard login procedures apply.

Can this be done with Zen Cart? Thanks!

You can use the "check/money order" payment module, and alter the wording as required.
The admin order confirmation e-mail will have all of the info.

Got another question. They just let me know they are needing to be able to track inventory in real-time. I would think that "quantity available" should be an option in the admin section of this app. However is there a way to automate this?

If they enter inventory into ZC accurately to start, and actually ship everything and only what is ordered through the site, then inventory will be up to date (if you consider "sold" items not yet shipped to be out of inventory).
There are various report mods available in Free Addons.
