I tried to override the files under:
includes\modules\pages
by creating a folder of my template, but looks it does not work.
Anything special for them in terms of override?
Thanks!

Correct. There are no overrides for /includes/modules/pages/ folders/files.
You must overwrite the files, ideally by merging your customizations into the existing version of those files.

In addition the BASIC rule is that where ever you see a "classic" folder
Those files(not folders) directly in that tree are overrideable
Where ever there is NOT an existing "classic" folder - those files are not overrideable
The exception is in the /includes/templates/your_template area where any file and/or folder contained in /template_default is overrideable inside of your template folder
