Editing and Changing Orders

Hello all. We are quite new to Zen Cart. We need to change/alter a customer's order. When we go to our customer's order, click her name, click "edit," and it takes us to the edit page. BUT, it is not possible to actually alter the products that she wants. There is only the option to refund or to void the order. We need to know how to take products off the order and also add products to an order when necessary. We are using ZenCart v1.3.9h. Can someone please help as soon as possible? We appreciate it so very much.
