I am not ready to offer products from my retail store for internet sale. Can I use Zencart as a showcase for the items I carry in inventory without allowing the ability to purchase?

You need to go to
Admin > Configuration > Customer details
and set "Customer Shop Status - View Shop and Prices" to 3.
All of your products will be listed with prices but cannot be purchased.
