Define Page Status determines whether the define pages and/or their links display.
Define Pages Editor allows you to edit the define pages - to see a list of the pages, click on the dropdown. These are the pages whose files are in includes/languages/english/html_includes/YOUR_TEMPLATE.
Admin - Tools - EZ Pages is where you create and set the display options for your EZ pages.

Does Define Pages include Ez-pages or are they separate entities?
Completely separate. Define pages are regular Zen Cart pages with several PHP files associated, and entries in page registries, etc. EZ-Pages are just HTML content stored in the database, and output according to some admin settings.
Are there advantages of using one type over the other?
A define page has its own URL and can handle PHP processing, but it is relatively complex to create (about 8 new files or file edits required). An ez-page is very fast and easy to create, but does not have a distinct "meaningful" URL, and cannot handle PHP.
