Is there a way to encrypt all customer data, addresses, the whole bit?
I know it might slow checkout a bit but would be okay.

What exactly do YOU mean by "encrypt"?
If your ZC site properly configured for SSL, then all communications on pages displaying or collecting sensitive data is already encrypted..

Oh, geez, sorry, I meant to encrypt all customer data stored in the db by using AES_DECRYPT() and AES_ENCRYPT() maybe

You'd need to write your own custom code to handle that.
