The various product types: Product - General, Product - Music, Document - General, Document - Product, Product - Free Shipping, are in one way all the same thing, but offer the ability to display things slightly differently or in the case of free shipping to enable some other feature to always be true. Okay, so a music product has fields that a general product does not, but nothing requires you to use all of the fields that are made available. There is no specific reason that a general document (which could be modified via the admin to allow adding to the cart) should be automatically prevented from being added as a featured product or not displayed in specials, etc...
As to perhaps an EasyPopulate program offering the ability to change the products_type, EasyPopulate V4 offers that possibility. One reason to consider using the Document - General or other such product type that can be set to not permit adding the product to the cart is that the product is not yet considered available for sale, and then when it is the products_type is changed. Problem is that such a change requires a SQL command/database edit to happen. There is no today "make this product this products_type" switch or button. Its not complicated, but its not there. Further, a reason for it not being there is to minimize self inflicted problems. For example if the product was changed from a product - music to product - general, what happens to the "extra" data that was part of it being a music product when it changes to a general product?
