Is there a way to create an easy form for visitors of my site to only have to enter their email address and they will be added to a distibution list where they can receive coupons? That way they are not required to enter all the information that is required to create an account?

Create a separate newsletter for that specific purpose, add a sidebox (or some spot) on your site for visitors to enter their email address. Done.
Services which will make that very easy include MailChimp, aweber, constant contact, etc..

Zen Cart has built-in support for ONE newsletter, and only for *customers* in your store who opt into it.
You said you want something for non-customers, so that's why I said what I said above..
