You will use admin > Catalog > Option Names Manager, then Option Values Manager, then Attributes Controller to set up the attributes you want on your products. The E-Start book will explain it thoroughly, as will the tutorials here (in FAQs above).
In addition to the template link given to you earlier, you might take a look at Picaflor's free zencart templates here:

This template is apparently new. Use the templateswitch upper left column to see all of them. Many, like the one I linked you to, come with background images, so you should be able to swap for yours.
Picaflor templates are known for being faithful to the zencart system without breaking anything, and validate well.

Background images, css color changes can be made to virtually any template. But since you're working with the classic green default template, are you sure you're uploading your changes to the proper place?

Be advised that these templates do not always validate and may even have errors that effect browser compatibility or SE results. The templates use of a frame or iframes could pose problems as well.
Picaflor-azul templates have been a choice of our customers and are probably the closest at validation "out of the box."
You will need to make sure that the result validates after you have made changes to suit your taste.
