Zen Cart itself only sends confirmation emails as a result of customers making a purchase on your site, and for follow-ups to those activities. Thus those emails fall under "implied consent".
However, if you take your customer lists and send emails to them for other purposes, or if you manually insert customer email addresses by adding customers manually or by entering email addresses from some handwritten list someplace, you will need to gain their consent for that separately. This includes all newsletter mailings you do.
So, the Zen Cart software basically doesn't fall into scope. But what DOES fall into scope is all of YOUR use of the information you collect from your customers, your visitors, and for everything you do to communicate with anyone about your business.
(That said, I'm NOT a lawyer, so consult your own legal counsel for relevant details specific to YOUR business.)

If you are sending out newsletters, using an ESP (Email Service Provider) which has a double-opt-in such as MailChimp would be evidence of compliance, in the event of a complaint. IANAL of course.
