I have a new client and all parties involved have agreed (by way of my recommendation ) that it'd be best to rebuild using ZenCart,
if there are any resources, examples of, or documentation etc. etc., of anyone copying product data from ShopSite to ZenCart please let me know.

Check out cart 2 cart migration service. I have not used that service, but I do use some of their other products.
