Try setting up a Website Maintenance message in Admin->Configuration->Website Maintenance. Then look at it in your store. Does that accomplish what you're after?

The look of the message is what I'm after, but shy of editing a lot of the language files to reword the message kind of goes a bit out there. Figured there was a way for me to go ahead and make a custom message like : "Due to heading on vacation, orders may be delayed..." etc etc.

You could create a banner, probably in header position 1.
Hmm.. I guess I could go with that option and just skin it after the warning. Fair enough then.
Can't think of good statement at the moment, but I would refrain from stating something like going on vacation.

Well vacation would be one way to word it. Essentially I plan on heading to conventions and since I'm the only operator of the site, the site would come to a stand still of sorts. But in essence it generally means the same. I'd rather not send out an email to do the same.
I added a switch in the admin to enable/disable the display of a holiday message, then put the relevant code in the contact form and in the product page template and the shopping cart pages so people are very clear their order will not be processed until a specific date. The text is in a language define.
I just say we are closed until a certain date, not that we are away or on holiday.
