Need To Change Some Text During Checkout

Hello

I am using 2 shipping option, the UK postcode module that works great and I am using Flat rate as well, I want to use Flat rate for Saturday delivery only so on step 1 of checkout where it gives you the shipping options I want to change the text that says FLAT RATE and the the text net to the radio button that says BEST WAY.

Could you be so kind as to point me in the right direction of the file (s) I need to edit to make these changes?

You would change the define in the language file:
/includes/languages/english/modules/shipping/flat.php

to read the way you are wanting it to display ...
