Default Catalog is not bilingual after removing and replacing English

I have defined the English and the Finnish as languages. When I choose Finnish in admin I see the whole catalog, with entries for both languages. I can enter "English" values and update, but they are not stored! If I choose English the whole catalog is empty - there is only the "new category"-button.
The English catalog doesn't show in the store either.

Yesterday I did remove the English language temporarily for editing purposes - but I didn't remove any code or anything.

Removing a language also deletes all the product-descriptions for that language.

    OK,

My bad, but why can't I now reenter the information, as I have added the language!? The required input fields are there, they just don't get stored!?

I started by adding the top level folder - but it doesn't become a category!

From a code perspective I'm not sure why it would do that to you.
But it's been years since I've ever deleted the default language.

I'd be inclined to restore from backup as soon as you discovered the missing data.

Restore from backup is what I did and that saved me. Will not do that one ever again....
